After a sight pressing, must fermentates and is kept three months with its lees in fine-grain new French oak barrels

Sludge removal or racking, done by gravity. The lees are stirred weekly to get a optimal fermentation process
Ageing
The wine ages in the same barrels for 6 months. After being bottled, it rests in the bottle for one year

Tasting note
Color:
Young gold, brilliant and seductive.
Nose:
Intense and balanced. with a marked floral touch and subtle smoked notes. Delicate and suggestive.
Taste:
Very fresh, with delicate reminds of white fruit and nuances of fine oak ageing. It shows a great ageing potential. A soft end, yet persistent and very pleasing.
Alcohol: 14,5% vol
Pairing
Fruit salads and salads with an exotic touch. Cold soups and creams: fruits, vegetables, dried fruits.
Steamed or grilled shellfish.
Seafood rice recipes — e.g. paella.
Baked white fish. Oily fish carpaccio.
Foie.
Creamy and soft cheeses.
Serve at 9 - 10º C / 48-50 F
Conde de los Andes also has another more ground-breaking line, Capítulos. A family of wines in which the winemaking is experimental and can change depending on the harvest.
This collection of limited editions, exploring specific aspects of the vineyards belonging to Conde de los Andes, has been launched with Capítulo I: a 2016 Malvasía with good length and interesting citric acidity of which 1,938 bottles have been made.
Capítulo II is a 2016 Garnacha with vibrant acidity and well delineated on the palate, made from plots planted in 1910 and 1940. 1,162 bottles have been made of this one.
In an impressive network of cellars with names like ‘Los Candiles', ‘Los Gallegos’ or ‘De la Flor’, at a depth of 40 metres, lie wines from vintages ranging from 1892 to 2019.
This kilometre, which holds the histories of centuries-old wineries, is the result of our commitment to renovating the cellars, maintaining the historic vintages and making wine in the winery.
More than 450,000 bottles are stored there, of which 40,000 are from before the 1970s.
The collection includes a large number of half-bottles and white wines.
